Made from raw sheep's milk from the Midi-Pyrenees, France. Aged for 8 months to a year. It is made on the same farm that the sheep graze on. It has a dense and oily texture, but not too hard. The flavor is both savory and sweet, with a mild nuttiness with hints of figs, hazelnuts, and olives. It tastes delicious with fruity red, full-bodied red or white wines such as Zinfandel, Tempranillo or Syrah.
