ABOUT THIS WINE

100% Pinot Noir. Zero dosage, the wine ages in vats and undergoes malolactic fermentation. It then ages on slats for 4 years. The grapes are sourced from 40 year old vines with southern exposure.

"Located in Polisot in the Aube department, in the heart of the Côte des Bar, our house has seen five generations of winegrowers succeed each other. From the vine to the wine, we produce our Champagnes within the property. For ethical reasons, we work in organic farming associated with biodynamic practices. If the harvested grapes are healthy, the vinification will take place in a much simpler and more natural way. The objective is to establish a healthy and balanced system in which the plant and the terroir will tend to express themselves in all their authenticity. Concerned about respecting the very essences that nature will have wanted to bring us, we hope that this way of thinking and working, participates in the delight of your palate."

It was in the 19th century that the estate was founded with the first member of the winemaker family, Athanase Piollot. Two generations later, Robert Piollot enlarged the plot. In 1955, the Val Colas Robin plot was cleared and then planted using his pickaxe. It is also thanks to him that all the vines are planted with Piollot mass selection. He devoted his life to selecting his best plants and then grafting them. It was in 1986 that his son Roland left school to settle with his parents. He immediately decides to champagne the entire estate and this is the start of marketing. Robert, very attentive to nature, left to his son the image of a viticulture very oriented towards the work of the soil and towards the observation of the plant. In 2009, the farm switched to organic farming to be fully certified in 2014 and then to biodynamics, very recently.
