Strict selection by hand on a vibrating table followed by gentle but extended whole cluster pressingFermentation occurs in a stainless steel tank at a controlled temperature. Aged on lees for 6 months with periodic bâtonnage in the tank.

ABOUT THIS PRODUCER

The pioneering winemaker Paris Sigalas bottled a PDO wine for the first time in 1991, the year that marks the opening of the Estate. Investing in the dynamism of the Santorini vineyard, he applied innovative ideas to both viticulture and winemaking methods, which led to a "dynamic evolution of tradition", which is his motto.

With a family tradition of viticulture, like most Santorinians, the future mathematician Paris Sigalas spent his student summers on the island, harvesting the family's vines and participating with friends in the production of the family's wine, a process that fascinated him more and more. Little by little he took over the reins of his grandfather's vineyards as well.

His passion for tasting and evaluating wine was what ultimately raised the bar for the wines he made himself.
