After gently pressing the grapes to extract the free-run juice, each of the varieties used to make the wine ferment separately. Then there is a second bottle fermentation of the traditional Champenoise method, and then a minimum of 30 months aging. It is disgorged before being released for sale, with the disgorgement date noted on the label. The result of this work is a fresh, expressive and 100% Mediterranean cava.

ABOUT THIS WINE

Lying 2 kilometres from the Mediterranean Sea, the Mirgin vines are planted in sandy loam soils at an altitude of 150-300 metres above sea level. The team use certified organic farming and the harvest is carried out manually in small boxes at the optimum point of ripeness for each variety.

ABOUT THIS PRODUCER

The family behind Alta Alella has spent their entire life dedicated to wine; that would be husband and wife duo Josef and Cristina. They’ve always been surrounded by vineyards and bottles; so it is only natural. There is a complete commitment to nature, yet desire to keep with trends. Though the winery is young, the family continually push themselves to learn new things with each vintage. The wines are very low intervention with no added sulfites; little is done to the wines after the grapes have been pressed. Regardless of their decision to start their own trends, the dynamic winemaking couple are making great strides in Barcelona.

Since starting out in 1991, the team has worked to recover old vines and plant new ones of local traditional varieties. Using organic farming principles to work their 43 hectares of vineyards since 2017, they have been awarded the status of “Vallcirera Classified Area” and they are the first in the DO Cava to produce cava without sulphur.
